Every year on the 3rd day of the third lunar month, people make floating cakes and vegetarian cakes. This is a traditional custom very familiar to all Vietnamese people.
The ingredients for making cakes are very common and familiar. First, we must have delicious sticky rice. It is possible to mix more plain rice, but glutinous rice still has to make up the majority. There is rice for the cake crust, more sugar is needed for the filling to make the cake sweeter. The traditional filling is made of honey with a rich aroma. Today, many families use rock sugar with a cool taste. To make the vegetarian cake filling, we need pureed green beans. In addition, need some sesame, copra to sprinkle on two types of cakes.
The way to make the cake is quite simple. First, soak the rice for about 6 to 8 hours, then wash the rice. After washing, pour the rice to grind the water. Note that it is not allowed to dry grind because that will make the rice crumbs and the grains after grinding will be unevenly sized. After grinding, pour all the powder into a cloth bag, tie it tightly, compress it with your hand slowly, gently to squeeze out the water. Avoid pressing too hard as it will open the fabric bag. Compress all the water, we will have a flexible dough to make the crust.
The next step will be the baking step. Drift cake is molded round, medium size. Put a sugar cube inside, shape the dough to cover it so that when boiling, the sugar does not melt. The filling of the vegetarian cake is green beans that are cleaned, cooked, and pureed. Cake and filling must be in a reasonable ratio. Do not leave the cake or filling too big or too small, it will lose its taste when eating.
The most delicate is to boil the cake. Bring the water to a boil then drop the cake in. Wait until the cake floats to the surface, gently pick it up and immediately drop it into clean and cold water. If you let it heat for too long, the cake will be melted, not flexible and delicious.
Enjoying floating cake, vegetarian cake is an art. Drift cake is presented on a plate, sprinkled with a thin layer of sesame and a little copra. Vegetarian cakes are presented in a bowl. Boil sugar water mixed with tapioca flour and then cover the cake. On top, sprinkle a few ripe green beans, broken in half, and cleaned. The clear color of the cake and the broth is in harmony with the bright yellow color of green peas. These are both cold cakes. Drift cake put in your mouth, close and then bite will feel the greasy taste of rice, the sweetness of sugar. As for the vegetarian cake, use a spoon to scoop up the piece of cake, take a light bite to see the sweet, cool and fragrant taste. With both types of cake, if you like, you can add a little grapefruit flower oil.
Now, people don't make cakes as much as before, but most of them buy them when they need them. But you have to cook it yourself and then enjoy it to feel all the deliciousness of the cake. Drift cake, vegetarian cake will forever be two unique traditional dishes of Vietnamese people.
